I love tacos. They are one of my favorite meals ever! They are also super easy to make and don’t require a lot of preparation! Depending on your topping tastes, it can be pretty inexpensive as well! I’ll break it down.
Roast $5
BBQ Sauce $1.50
Corn Tortillas $2
Salsa $2
Sour Cream $1.50
Cheese $2
That’s $14! The best part is that it will feed a small army! So invite your friends over and enjoy!
Get a pork roast that will fit into your crock pot. Pour enough apple juice to cover most of the roast.
Set it to low and cook for about 8 hours til it shreds with a fork.
Add 1 bottle of BBQ sauce and let roast cook another 10 minutes.
Put a little oil in a skillet. When oil is hot, use tongs to fry corn tortillas on each side.
Lay tortillas on a paper towel to drain oil off them.
When roast is cool enough, place in bowl and shred.
Add your favorite toppings and enjoy!
I love to put the roast in the crock pot the night before and let it marinade in apple juice all night long. Just keep in the fridge. It is absolutely delicious!
When my neighbor brought over a big rubbermaid tote full of apples, I had one thing on my mind. APPLESAUCE! I love homemade applesauce and my girls just love applesauce. So the dreadful task began. Over 3 days we cored, diced and cranked. It was a lot of fun to get the girls involved.
I started out with a big pot. I put the cored apple pieces into the pot filled with juice and water. The smell was amazing! Sugar is not needed since the juice helps with the flavor. Cook the apples until they are tender. Then I placed them in the Sauce Master. This handy contraption is a tool my neighbor loaned to me and I fell in love with! It takes the apple waste and separates from the good apple stuff. There were two different sizes on it so I used the bigger one for 3/4 of the applesauce. Then I changed to the finer one. After mixing them together, it was the perfect consistency! Add a little cinnamon to flavor and you are done!
You can freeze the applesauce in freezer containers. I chose to can them. Since I don’t have a canner, I did the Hot Water Bath Method. It was easy and will keep my applesauce even longer! Be sure to check out the video of my applesauce making ability. Patience with the videographer, she is learning!
As you might have seen, I recently gave 3 winners 2 boxes of Chex Mix bars. During that time, I gave additional entries for their favorite recipes! Over the next few days, I will be sharing these recipes with the proper acknowledgement and a link!

I am a huge fan of Fried Rice. The problem is that the ONLY chinese restaurant in our town SUCKS! It is also expensive. So I took up making my own. I am able to adjust everything and do what I like. I have tried a variety of season packs and found that this one is my favorite. It is from Sun-Bird and has an easy to follow recipe.
SHRIMP FRIED RICE
- 1 packet of Sun-Bird Fried Rice Seasoning (or your favorite seasoning)
-3 cups cooked rice
-1/4 cup chopped green onions (2 bundles)
-1/2 cup frozen peas
-1/4 cup match string carrots
-1/3 cup oil
-2 tsp soy sauce
-4 eggs beaten
-1/2 lb salad shrimp
Heat half oil in wok or skillet. Stir fry rice and green onions.
Add seasoning and soy sauce.Stir fry until mixed.
Move rice to side and scramble eggs on clear side of pan; mix with rice.
Add peas, carrots and shrimp. Stir fry for 2 minutes.
